Chocolate Mint Avocado Cookies
I’ve been on this kick of using up everything in my fridge before I go to the store again. We don’t produce all that much waste at home, but the waste we do usually have is food waste. We eat lots of leftovers and I repurpose just about everything I make, but some items still slip through the cracks and before I realize that they are there they’ve gone bad. Which leads me to today’s recipe.
I’ve had two avocados in the fridge for some time now, and though it takes them a long time to go bad when kept cool, I wanted to make sure I used them before I totally forgot about them. The husband isn’t a fan of avocados and I can’t eat a whole avocado in one sitting, and since they go bad very quickly I usually have to throw some out. So this time instead of using it in a savory dish or on a salad I decided to see if I could put a sweet twist on it.
I’ve made chocolate avocado pudding before, so I knew it could be used in a dessert – mostly because it has a very neutral taste that goes with just about anything. As most of you know, I am highly addicted to anything minty and with the holiday season in full swing I thought it would be the perfect time to test out some chocolate mint cookies using avocado as the fat instead of Earth Balance or shortening.
Most people would be shocked to find out that these cookies have avocado in them and it might turn them off if they haven’t tried one yet. But once they do try one they won’t be able to resist! If you love chocolate and mint then you’re sure to like these cookies. Best of all, you can take them as a treat for your coworkers or other gatherings and no one will ever know they’re enjoying a decadent, yet fairly healthy cookie!
