Happy Sunday, ya’ll! Is everyone ready for Monday morning? I know I’m not quite ready yet! We had a great weekend celebrating a friend’s birthday, so I’m still recovering a bit!

This week I wanted to bring you some ideas for the upcoming 4th of July holiday (for us in the U.S.). So many people grill out and have picnics for Independence Day that I thought some inspiration could do us all some good. I don’t know about you, but I get stuck in a rut when it comes to potlucks and picnics. I tend to always make the same chickpea salad or black bean brownies, so I was in need of some fresh ideas. Enjoy the best of the interwebs for this week!

Summer Berry No-Bake Cheesecake – Not only does this dessert utilize Summer produce, but it always has some of the classic 4th of July colors so you’ll be delivering a festive and tasty finale for the picnic!

Chocolate Dipped Strawberry Creamsicles – This is another festive-looking dessert that is perfect for a warm summer day. Though these might be a bit tough to bring to a picnic, you could keep them in the freezer during a grill out for the perfect end to your meal.

Grilled Sweet Potatoes with Cherry Salsa – Bring something a little different to grill this holiday with this sweet potato recipe! Sweet potatoes are amazing when grilled and this cherry salsa looks fantastic!

Classic Macaroni Salad – This is a traditional summer potluck side dish that seems as American as apple pie. Meaning, it’s totes essential to any summer get together! This vegan version looks delish!

Red Velvet Pancakes with Berries – If you are serving brunch or breakfast as part of your Fourth of July festivities, then these should be the star! Not only are they colorful, but they also use some seasonal berries that add tons of flavor!
