Crowdsource Recipe Testing: April 22nd

Happy Sunday everyone! I hope you all had a great weekend. Mine was a lot of fun – I was involved in gorilla fun run that my work organized for a local charity and it was a huge success – we had almost 500 people running through town in gorilla suits!

As you may have noticed from my post on Friday, I have warmer weather on my mind, so I thought I would dedicate today’s crowdsource post to some amazing-looking spring/summer recipes.

Citrus Quinoa Tempeh Plate – If this dish tastes even half as good as it looks we’ll be in for a bright treat! This plate has bright, fun colors and fresh citrus flavors, which is perfect for a warm-weather dish! The addition of the quinoa also makes this a hearty dish that you could easily serve for dinner.

Meyer Lemon Bars – Lemons just ooze spring and summer for me so I love any recipe that uses them! These bars look super yummy and they utilize a lot of healthier options for the crust and filling than you would normally see in a dessert.

Breakfast Bruschetta – I love this idea. Having a light bruschetta for breakfast with fresh tomatoes and avocados would be perfect on a warm spring morning. This would also be a fun dish to take on a picnic or to serve at a brunch. You could mix up the toppings and have a little bruschetta bar!

Spring Strawberry Salad – Salads are the perfect complement to a warm spring lunch or dinner and this salad uses lots of light flavors that would make it great as a dinner starter or a small lunch. I really love the vinaigrette used on this salad because it has some unexpected flavors such as┬áturmeric.

Stuffed Portobello Mushrooms – This is a basic stuffed mushroom recipe, but the addition of the dill and parsley give it some springtime flair. I love this recipe because it is a simple dish that you could put together any night of the week without much hassle – more time to spend out in the nice weather!
