Crowdsource Recipe Testing: Back to School Edition
Well folks, it’s official – summer is fading and school is just around the corner. *Sad face* Even though I haven’t been to school in a few years, my little one is starting kindergarten this year, so I am all too aware of how close back-to-school time really is.
Since I obviously do not want my little one eating what the cafeteria serves, I need to come up with some creative lunches to send along with her that won’t get boring and will keep her full for the afternoon.
For this week’s crowdsource post I thought I’d share with you some of my favorite packable lunch recipes I came across on the interwebs:
White Bean and Sweet Potato Burgers – The little one loves vegan burgers and these bad boys are packed with all kinds of good stuff that’s good for you! Vegan burgers are super easy to make and freeze ahead of time too, so not only are they healthy but they’re convenient, too!
Strawberry Fruit Roll Ups – When I was a kid Fruit Roll-Ups were one of my favorite snacks to take to school! These conjure up a bit of nostalgia for me, but I love them because they are a much healthier alternative to the sugar-laden ones I used to devour.
Grab-n-Go Oatmeal Jars – Ok, how cute are these? Not only are they adorable, but they are also functional. These would be perfect for breakfast or lunch and all you have to do is make up a big batch on the weekend and then add some hot water and pack it up for the little one on the way out the door.
No-Bake Chocolate Almond Granola Bars - Granola bars are a great way to keep hunger at bay throughout the day and can be a mid-day snack or as part of a well-rounded lunch. Love that these are no-bake and the little one will appreciate the chocolate aspect of them!
Double Chocolate Chip Cookies – What’s lunch without a little sweet bite to finish it off? These yummy-looking chocolate cookies are both wheat and soy-free, so they are perfect for little ones (and let’s be real, big ones too!) with allergies.
