Crowdsource Recipe Testing: Cold Weather Favorites

Friday was officially the first day that we had snow that stuck around for more than a few hours and it’s snowing again today. Though I love having the snow in time for Christmas, it mostly makes me want to stay in my house for always wearing my footie pajamas (don’t judge). It also makes me want to cozy up with a warm, filling dish that makes my belly happy and warms me up from the inside out.

On that note, here are a few of my favorite cold weather vegan dishes that I found on the interwebs recently. So many yummy dishes, only so much time…

Beet and Potato Gnocci – This warm and festive-looking dish would be a scrumptious way to warm up on a cold day. Also, you get in tons of great nutrients from the beets that you don’t have to feel guilty about eating a whole bowl!

Pureed Winter Vegetable Soup – Such an easy soup to throw together and I love the silky texture of pureed soups! This soup would be very filling and super nutritious, which makes it a winner in my book. Also, the lovely color is enticing enough that the little ones would probably try it without putting up too much of a fight.

Smoky Sweet Potato Soup w/Jalapeno Cornbread – I’ve mentioned a couple of times that I’m originally from the South, and nothing says southern cooking quite like a good cornbread – add jalapenos and it’s a match made in Heaven. I am so excited to try out this dish – comfort food at it’s finest.

Samosa Pot Pies – The recipe for this ah-mazing looking dish is in High Protein Vegan, so I may end up picking up that cookbook just for this! I lurve Indian food so hard and pot pies are also one of my favs and I can just imagine digging into this delightful dish on a chilly night!

Cranberry Orange Muffins – I love vegan baked goods and with the holidays approaching these festive cranberry orange muffins would be a delicious and comforting breakfast or dessert. What better way to start off a cold day than with a fresh, steaming muffin?

The holidays are getting closer – so exciting! This coming week I’m going to have a a couple of new recipes for you as well as a product review or two! ¬†Also, going to “Elf” today at the Ordway Theatre – yay!
