Crowdsource Recipe Testing: July 15th

Hi everyone! I had an action-packed weekend! Saturday it was the first annual Twin Cities Veg Fest (a smashing success!) and Sunday it was the Color Run in Minneapolis! Though I had a lot of fun I’m definitely ready for a little bit of rest and relaxation!

With that in mind, this week’s inspiration comes from the idea of resting and relaxing: mostly some food and beverages that make me think of a lazy day curled up on the couch or on a blanket in the grass with a book!

Strawberry Infused Bourbon – I was never much of a bourbon fan until my mom introduced me to bourbon mixed with peach tea – yum! Now I love the smoky flavor of bourbon and this strawberry infused version would be delicious to sip on while hanging on out the porch and relaxing!

Lemon Blueberry Scones – Scones always remind me of a lazy weekend morning when you have time to bake of some tasty breakfast treats and enjoy them with a cup of tea or coffee. These refreshing-looking scones would be the perfect way to start off any lazy day!

Raw Apple Pie Cookies – Apple pie is probably one of the most widely recognized comfort foods out there and this healthy, raw take on the classic dessert is just what the doctor ordered for a hot summer day!

Stuffed Sweet Potatoes – When I’m craving comfort food anything starchy will do. This healthier take on stuffed baked potatoes would satisfy my comfort food needs without having to overindulge. Also, you can pretty much stuff these with whatever strikes your fancy (or whatever you happen to have in your pantry)!

Maple Peanut Butter Ice Cream Sandwich – Peanut butter cookies are another one of my favorite comfort foods and by combining them with delicious ice cream you get a treat that’sĀ irresistible in the hot summer months!

I hope you have some time to make these in your own kitchens this week! I have a pretty busy schedule for the rest of the summer but I hope to try my hand at some of these, especially the raw cookies!
