First of all, I want to say Happy Mother’s Day to all of the mommies out there! Hope you get breakfast in bed or at least a little quiet time :)

Secondly, I’m sorry I missed Thursday’s Sandwich Queen post. My sister-in-law got married this Friday so things have been hectic around here. I promise it’s a great recipe you won’t want to miss this Thursday though!

Now, on to this week’s best vegan recipes on the interwebs. I’ve been really on the dinner party kick lately (not that I’ve had time to throw any, but I really want to!) so I thought I’d post some of the best recipes and ideas I came across this week for dinner parties. Enjoy!

Bloomin’ Onion Bread – I love this idea for a couple of reasons: 1) It’s super easy and 2) It makes great little single-serve appetizers to serve at dinner parties and potlucks. The final product is adorable so if they taste as good as they look your guests will be in for a treat!

Toast Cups with Tofu Scramble – If you are having people over for brunch then this would be a perfect dish to serve. These single-serve little breakfast cups are easy to make and combine everything I love about breakfast into one bite – yum!

Refried Bean Ramekins – This is a very simple refried bean dish, but the idea of serving them in small, individual size ramekins is so cute! Serving them like this takes them from a boring side dish to a fun addition to the snack table.

Mini Peanut Butter Cups in a Jar – Not gonna lie, I’d be totally impressed if I came across these lovely dessert cups at a party. Anything layered in a jar is already a hit at parties, but when you combine chocolate and peanut butter in them I’m sure it’s all anyone will be able to talk about!

Lemon Curd Tartlets – If chocolate and peanut butter aren’t your thing (well, that’s sort of weird, but I’ll still love you) or if some guests have allergies, then these little lemon curd tartlets are a great alternative – or get a little crazy and serve both!
