Crowdsource Recipe Testing: Picnic Edition

Happy Memorial Day weekend! I hope you’ve all had a good weekend so far – and the best part? We still have an entire day of the weekend left! The weather here has been on-and-off raining/excruciatingly¬†hot, but we’ve been able to get outside and enjoy the weekend still so it’s been good so far.

In honor of the long weekend and the warm weather I thought it would be a good time to showcase some recipes that are perfect for picnics or potlucks. My summer is always full of large group gatherings – usually outdoor gatherings – so it’s good to have an arsenal of recipes that are easy to make and store in bulk.

Here are some of the best recipes I’ve found on the interwebs for picnic-ready dishes that will impress your friends and family!

Creamy Greek Summer Salad – This salad is full of Greek flavors such as dill, cucumber, and tomato and it also has a delicious-looking creamy cashew dressing that makes this a decadent salad for any get together!

Curried Quinoa and Chickpeas – This salad has a ton of interesting flavor combinations: raisins, orange juice, and sweet bell peppers to name a few. Chickpeas and quinoa are two of my favorite things, but I’d never thought to combine them: genius! I also love the citrus notes along with the sweeter flavors of the raisins and peppers.

Broccoli, Avocado, and Rice Salad – This is one of the more interesting (and beautiful) salads I’ve seen lately. Though I couldn’t get a picture to show you – I definitely recommend heading over the her blog and checking it out – it’s well worth the time! This salad features broccoli, wild rice, and an avocado dressing. I like the idea of combining veggies, fats, and grains all in one dish – it’s a meal in itself!

Sauteed Chickpea Salad – Though this is a warm salad, you could definitely serve it cold as well. This salad features lots of light flavors including capers and mint and it has an addition of a Middle Eastern spice, Sumac, which adds a huge depth of flavor. Definitely something I’m sure your fellow picnikers have never had!

Asparagus Salad with Hearts of Palm – This light, summery salad is perfect for any gathering. Unique additions such as hearts of palm make it stand out from other asparagus salads, but the chives and vinaigrette keep it light enough for the heat of the summer.
