Crowdsource Recipe Testing: Summer Favorites

Hey everyone! It’s definitely summer now (it’s been in the 90′s for the last week here!) and it’s gotten me thinking about some of my favorite summer dishes. I love fruit salad, anything with cucumber, and tofu dogs – but all of these things are somewhat dull and unexciting. With that in mind, I wanted to find some new summer favorites that had a little more flair! Here’s the best I’ve found on the interwebs this week and I can’t wait to give them a shot!

What are your summer favorites?

BBQ Pineapple Pizza – Pineapple is one of my favorite summer fruits: so tangy and refreshing! This vegan BBQ pineapple pizza makes great use of the pineapple and brings a refreshing note to a normally heavy dish.

Prickly Pear Sorbet – I’ve never been big on ice cream, but sorbet is something I can definitely get behind. I love the use of the prickly pear here as it’s not an ingredient you see everyday. This would taste phenomenal after a long, hot day in the sun!

Raw Berry Tart – Fruit tarts are one of my all-time favorite summer desserts! This raw berry tart is even more healthy for you by making the crust out of cashews, almonds, and dates and has a fruit and nut milk center! Delish!

Maple Walnut Popsicles – These flavors are usually something I associate more with Fall or Winter, but when combined with some banana soft serve it makes for a tasty-looking summer treat!

Zucchini Noodle Pad Thai – I love pasta, but in the summer I either feel too hot to eat pasta or I don’t want to heat up the house with the stove. This zucchini noodle pad Thai is a great way to get your pasta fix in the summer without the heat! Plus, zucchini is awesome – it’s a win-win!
