Easy Pecan-Cranberry Millet

Pecan-Cranberry Millet

The holidays are winding down, but many people still have holiday-themed parties in the coming weeks. This easy millet recipe is a great dish to take to potlucks and it can also be served as part of a fancy sit-down dinner. Whether you are serving a large crowd or just your own family, this recipe will make it look like you slaved away in the kitchen when it really only takes about 25 minutes and it’s sure to be a crowd pleaser. I love serving this millet dish in place of a potato or rice dish.

Easy Pecan-Cranberry Millet

Ingredients

  • 1 cup Millet
  • 2 cups Water or Vegetable Broth
  • 1/2 cup Pecans, chopped
  • 1/2 cup Cranberries, dried or fresh
  • 1 tsp Ground Thyme
  • 1 tbsp Olive Oil
  • Salt & Pepper

Directions

  1. Heat the olive oil in a skillet over medium heat. Add the millet and toast gently for about 5 minutes, or until it becomes a tan color and is aromatic.
  2. Bring the water/vegetable broth to a boil in a saucepan. Add the toasted millet and stir. Turn the heat to low, cover, and simmer for about 15-20 minutes, or until most of the water has been absorbed. Remove from heat.
  3. Add the pecans, cranberries, ground Thyme, and salt and pepper. Stir well and cover for about 5 minutes until all ingredients have warmed through.
  4. Serve family style with any main dish!
