Holiday Cranberry Couscous

Vegan Holiday Couscous Recipe

It’s Monday again and that means it’s time for a new recipe! In preparation for the Thanksgiving holiday I created this Holiday Cranberry Couscous and it is the perfect side dish for your family’s feast!

I will be in charge of a lot of the cooking/recipe curating this Thanksgiving because my amazing family has agreed to do a vegan dinner (even though I’m the only fully vegan person that will be there) and since I’m not a big stuffing fan I wanted to come up with an acceptable replacement. This couscous dish is a bit dry for some who are used to a more moist stuffing, but it has all of the full flavors of a traditional dressing (my family from Oklahoma refers to stuffing as dressing – what do you call it where you’re from?).

This recipe serves about 3-4 people, but it’s quite easy to double or even triple if you need to.

Holiday Cranberry Couscous

Ingredients

  • 1/2 small Onion, diced
  • 4 medium Mushrooms, diced
  • 1 tbsp Olive Oil
  • 1/2 cup Couscous
  • 1/2 cup Water or Vegetable Broth
  • 1 tbsp Vegetarian Chicken Seasoning
  • 1 tsp All Spice
  • 1/2 tsp Thyme
  • 1/2 tsp Coriander
  • 1/3 cup Dried Cranberries
  • Salt and Pepper
  • 1/2 cup Couscous

Directions

  1. Heat oil in a medium sauce pan. Add onions and mushrooms and saute for 10 minutes.
  2. Remove onions and mushrooms from pan and add water, spices, and chicken seasoning. Stir well and bring to a boil.
  3. Add couscous and stir. Cover and remove from heat. Let sit for 5 minutes. Fluff couscous with a fork.
  4. Add onions, mushrooms, and cranberries. Stir well. Add salt and pepper to taste.
