Lentil Amaranth Chili
I have a confession to make: I’ve been a bit lazy in the kitchen lately. Between work, toting the little one around, blogging, writing gigs, and recipe testing I haven’t had much energy left to cook meals let alone create new recipes. On a particularly lazy night last week I wanted to make a somewhat healthy and balanced meal, but I didn’t want to spend much time in the kitchen.
I took a look through my cupboard and realized I had a ton of grains, beans, and veggies, but I didn’t want to do the usual tacos or Buddha bowl. Thus this soup was born. I am calling it a chili because the flavors are very similar to those that I use in my regular bean and tvp chili and it is very hearty like I am used to with my chili recipes. The end result is probably more akin to a porridge than a chili or soup, but either way it’s dang good.
With the fall weather moving in it’s nice to have this easy and hearty dish in my soup rotation. It’s a one-pot dish and packed with nutritious grains, legumes, and veggies – not to mention tons of flavor. You could ramp up the spice level by adding on some hot sauce at the end or even a few chopped jalapenos.
