Maple Nut Smoothie

When I was growing up my parents were always working on a project. Whether it was building furniture or renovating a bathroom, they always had something in the works. As such, we made A LOT of trips to the home improvement store (here in Minnesota it’s Menards).
Now, I have to admit, I was not a fan of these stores – nothing fun to look at or play with and the trips seemed never-ending. However, one thing I looked forward to was check-out, because right next to the register were the chocolate covered peanuts and Maple Nut Goodies. For the uninitiated, Maple Nut Goodies are this little nugget of deliciousness: a peanut, covered in soft toffee, covered in a maple syrup candy coating! The crunch of the candy coating followed by the sweet creaminess of the toffee finished off with a salty peanut was pure heaven.
This smoothie is my healthier, vegan version of Maple Nut Goodies. The almond butter gives it the salty, nutty flavor of the original and the maple syrup gives it its namesake. The cinnamon and nutmeg reflect the flavors on the toffee and it all comes together with the mild sweetness of banana.
This may be one of the best desserts I’ve ever made, and I think I may end up having it for breakfast, too 🙂
- 1 Frozen Banana
- ½ tsp Cinnamon
- ¼ tsp Nutmeg
- 1 tbsp Almond Butter
- 1 tbsp Maple Syrup
- 1 cup Almond Milk (or other non-dairy milk)
- Put all ingredients in a blender and blend until smooth. Top with an extra sprinkle of cinnamon!
