Oh She Glows Crispy Tofu
When I saw this recipe pop up in my reader the other day I knew I had to try it out! I am a huge tofu fan and I’m always on the lookout for new ways to prepare it. When I like to crisp up my tofu slices, I generally toss them in a pan with some oil and fry it up. This recipe, however, takes a lighter approach and uses a breading/baking method that gives you the same crunch (maybe even more so) without all of the excess oil.
I generally love all of the recipes Angela over at Oh She Glows comes up with and this one did not disappoint. From the super crunchy outside to the creamy inside, these tofu slices were just what I needed on a cold Minnesota night (and by cold I mean really cold, like -30 windchill cold). I prepared these tofu strips with the sweet potato fries she makes as well and they were, in fact, the perfect combo.
I had some amazing cinnamon sweet potato fries at The Current Restaurant in Afton, MN last weekend and I wasn’t sure these would match up to those – but they did! They may have been even better because they didn’t cost me $8 :).
