Sandwich Queen: Southwest Tea Sandwiches

I’m taking a break from Jeff Mauro’s Sandwich King recipes this week to bring you one of my own creations. I’ve been seriously obsessed with tea sandwiches lately – I blame it on the urge to throw dinner parties – so I wanted to show you one of the creations I’ve been working on.

These tea sandwiches are a little bit ugly in color, but where they lack in appearance they make up for in flavor! The avocado gives them a smooth texture and the hot sauce adds a little kick. The corn and onion add some bite to these tasty meal-starters.

Serve these at a picnic or as an appetizer before a dinner time. Or, better yet, serve them at a tea party! These are a fun little snack that the little ones also love, so you could serve them as a nice, mid-day summer-time snack.

Southwest Tea Sandwiches

Ingredients

  • 1 medium Avocado
  • 1/2 medium Onion, diced
  • 1 tbsp Hot Sauce
  • 2 tsp Chili Powder
  • 1/2 cup Corn, cooked
  • 4 slices Bread, crust cut off

Directions

  1. In a food processor, add the avocado, onion, hot sauce, and chili powder. Blend until well combined. Add the corn and blend until no large chunks remain.
  2. Top two slices of bread with the spread and top with another slice of bread. Cut into triangles and serve.
