Sandwich Queen: Southwest Tea Sandwiches

I’m taking a break from Jeff Mauro’s Sandwich King recipes this week to bring you one of my own creations. I’ve been seriously obsessed with tea sandwiches lately – I blame it on the urge to throw dinner parties – so I wanted to show you one of the creations I’ve been working on.
These tea sandwiches are a little bit ugly in color, but where they lack in appearance they make up for in flavor! The avocado gives them a smooth texture and the hot sauce adds a little kick. The corn and onion add some bite to these tasty meal-starters.
Serve these at a picnic or as an appetizer before a dinner time. Or, better yet, serve them at a tea party! These are a fun little snack that the little ones also love, so you could serve them as a nice, mid-day summer-time snack.
Ingredients
- 1 medium Avocado
- 1/2 medium Onion, diced
- 1 tbsp Hot Sauce
- 2 tsp Chili Powder
- 1/2 cup Corn, cooked
- 4 slices Bread, crust cut off
Directions
- In a food processor, add the avocado, onion, hot sauce, and chili powder. Blend until well combined. Add the corn and blend until no large chunks remain.
- Top two slices of bread with the spread and top with another slice of bread. Cut into triangles and serve.
