Zucchini Apple Sandwich

I know, I know, another zucchini recipe – but this one is seriously too good not to share with you gals (and guys!). My inspiration for this sandwich came from JL and her Cucumber and Apple sandwich. Before I read her post and recipe last fall, I had never thought to put apple on a sandwich.

Zucchini Apple Sandwich with Spinach Garlic Spread

I’m not one for mixing my sweet and savory ingredients so I was a little skeptical about the apple-sandwich idea. The other day I was thinking about my sandwich post for this week and I knew I wanted to incorporate some fresh veggies and spinach, but one of the issues I always have with spinach on sandwiches is that it never seems to stay put. So, the idea of the spinach spread was born. As I was making the spread, I had an apple in my fruit bowl that was just staring me down, so I took that as a sign and decided to give it a shot.

The results were amazing! I think the apple-sandwich might be a new go-to for me and it’s definitely a great way to use up some of your CSA or farmer’s market haul. These ingredients would also make for some interesting and delightful tea sandwiches for parties.

Zucchini & Apple with Spinach Garlic Spread

Ingredients

    For the Spread:
  • 1 cup Spinach
  • 2 tbsp Garlic, chopped
  • 2 tbsp Tahini
  • 1/2 Lemon, juiced
  • For the Build:
  • 1 Apple, thinly sliced
  • 1 small Zucchini, thinly sliced
  • 4 slices Sourdough Bread
  • 2 tbsp Earth Balance
  • Salt and Pepper
  • Balsamic Vinegar (optional)

Directions

  1. Add all of the spread ingredients into a blender or food processor and puree until paste-like. If it seems a bit too thick you can add a little water, one teaspoon at a time.
  2. Warm a skillet over medium heat and spread the Earth Balance on one side of each slice of bread. on two of the slices, spread half of the spread onto the side of bread without butter.
  3. Layer 4 slices of zucchini and 4 slices of apple onto the spread. Drizzle a bit of balsamic over the zucchini and apples and then sprinkle with salt and pepper to taste. Top with another slice of bread, butter side up and place into the warm skillet.
  4. Cook 5 minutes or until bread is golden brown. Flip and cook an additional 5 minutes. Slice in half and serve warm!
