I’m happy to report that after some good news + a little date with some vodka I am feeling much better than I was last week 🙂 I had a great time this weekend with the fam – I definitely recommend going to see Body Worlds if you ever get the chance, the human body is quite amazing!

There were so many delicious-looking vegan noms on the interwebs this week, it was super tough for me to pick out which ones to feature here! A lot of these recipes would make great dishes to serve at your spring potlucks or barbecues  so get ready to impress your friends with some plant-based yumminess!

Quinoa Avocado Salad – This bright and colorful salad is perfect for the warmer weather, but it is hearty enough to be a filling side for any main dish.

Satay Vegetable Tofu Stir-Fry – The husband and I adore Asian cuisine, and this looks phenomenal! I love the mix of brightly-colored vegetables and rich sauce used in this recipe. I could see this being something I’ll take along to parties in a slow cooker – yum!

Sweet Potato Sauerkraut Latkes – A little German in your recipes goes a long way, and these are proof! Who doesn’t love the combo of potatoes and sauerkraut?

Salt ‘n Pepper Tofu Bites – This recipe is quick and easy and would make the perfect appetizer for parties. It’s amazing how sometimes the most simple ingredients can make the tastiest dishes.

Summer Squash Risotto – Even though risotto isn’t the quickest dish in the world, this recipe has all of the bright and light flavors I love in a spring dish.


Now that grilling season is upon us, what are you most excited to grill?



  • I went to Body Worlds a few years ago. It’s a fascinating but macabre exhibit and a new way to understand our own bodies.

    This grilling season I’m looking forward to the continued arrival of asparagus in the market. As good as asparagus is roasted, it’s even better on the grill.

    • Asparagus is definitely better on the grill – can’t wait for our farmer’s market to open!

    Body Worlds was in London several years back and although I’m not usually a science-y type person I thought it was so interesting. Thanks for the links- that peanutty tofu stir-fry looks fantastic.
    I love having a bbq- we don’t really say “grilling” over here! It’s also probably a while before we can start thinking about having one right now- rainy and cold today 🙁 BUT, when we do, corn on the cob and bananas in tin foil stuffed with dark chocolate will feature!

    • Definitely looking forward to putting some bananas and chocolate on the grill – yum!
