I’m really digging our Farmer’s Market lately. There is such a variety of beautiful produce that my only problem is deciding on what to pick! This is a far cry from last summer when we had just a handful of stands without much variety between them. This is an exciting development and I hope it continues throughout the fall here in our area.
Since I’ve had such a bounty of fresh produce, I’ve been focusing on preparing meals that are veggie-centric and really make use of seasonal produce. Here are some of my favorite veggie-centric recipes on the interwebs this week.
Zucchini Ribbon Pesto Salad – I don’t eat a lot of regular pasta, but I love zucchini noodles. This pesto salad combines delicious Italian flavors for a dish that is healthy, light, and easy to prepare.
Lemon Rosemary Grilled Artichokes – Sometimes the simplest preparation is the most delicious, and I think that’s the case with these grilled artichokes. I love that you can make them outside and the added citrus would likely make the flavors sing.
Farmer’s Market Gazpacho – This is another recipe that doesn’t require any heat, but the flavors don’t need it in order to shine! You can get everything you need for this soup from the Farmer’s Market (hence the name), which is an awesome perk!
Eggplant Burgers – My kitchen runeth over with eggplant lately, and these look positively scrumptious! They use cannelini beans to hold everything together and it is topped with tons of fresh produce!
Peach Kale Smoothie – Both peaches and kale are in season right now, and I’ve been on a smoothie kick trying to up my calorie intake, so I can’t wait to make this! I’d guess that the sweetness and light tartness of the peaches would be a great complement to the earthiness of the kale.
