Sunday Funday August 25th
Well, the end is here. School (university) starts next week and then my little one goes back to school the following week – I can’t believe summer is coming to a close! We were so wrapped up in the house this summer and I traveled so much in the spring that we didn’t do much on our list of normal summer activities unfortunately. But, the good news is we are finally in our new house (which was much needed) and we are finally settled in and ready to start the school year!
But, I still have a few days of freedom left, so I want to enjoy every last minute of it. Here are some delectable vegan recipes that will help me do just that.
Strawberry and Summer Fruit Sangria – Fruit, vodka? I’m in. I can’t wait to sip on this sitting on my deck and watching the sun go down. Who needs to be on vacation to enjoy a cocktail every now and then? Not this girl.
Banana Peanut Butter Spread – This very interesting recipe uses freeze dried bananas and banana extract to boost the banana flavor of this peanut butter spread. Peanut butter is one of my guilty pleasures and bananas are my favorite fruit, so this is a match made in vegan food heaven for me!
Gluten Free Donuts with Chocolate Glaze – I’ve never been a big donut fan, but these look too incredible to resist! Not only are they gluten free, but it uses coconut sugar as a sweetener, which is more appealing to me than regular white sugar.
Blackberry Lavender Popsicles – Berries abound during the summer, so technically this is like seasonal eating – right? Also, we are in the middle of a late-summer heat wave, so these would be a delicious cold treat!
Pomegranate Blueberry Spritzer – Again, berries are one of my favorite things to eat in the summer because they are so fresh! Add some vodka and you’ve got the perfect summer refreshment (I’m not a booze hound, I swear) 🙂
