Sunday Funday: Cinco de Mayo
Happy Cinco de Mayo everyone! I know this holiday is really just an American excuse to do some day drinking and eat loads of delicious Mexican food, but that doesn’t make it any less fun – amiright?
So, in honor of today’s semi-made-up holiday (you can see the real history of Cinco de Mayo here if you’re interested), I’d like to share with you some of the most amazing Mexican-inspired vegan dishes on the interwebs:
Creamy Tortilla Soup Enchiladas – These easy enchiladas are a great last-minute dish because they use a soup starter to get the party started. The final product would make a beautiful centerpiece to your Cinco de Mayo dinner!
Chipotle Seitan Tacos – These look crazy good! The overall product looks a little involved (4 separate recipes), but it looks totally worth it. I love the addition of the charred corn – what a great way to add a pop of flavor!
Homemade Enchilada Sauce – Enchiladas are one of my favorite dishes, in fact, it’s what the husband made for me the night he proposed! Anytime I can make something from scratch I’m all for it, though I’d never thought to make my own red sauce. This recipe takes the mystery out of it and makes it accessible.
Mexican Sloppy Joe Tacos – Perhaps these should be called sloppy ‘Jose’ tacos? Either way, they look delish! The best part about these is that you can make as much of the filling as you need and you could put it in a slow-cooker if you are serving a lot of people at different times throughout the day!
Low-Cal Margarita – This one is an oldie, but a goodie. I love me some margaritas, but I hate all of the syrups and other junk they put in them at most places or in mixes. These low-cal, super easy margaritas have all the taste without all of the artificial stuff!
