Sunday Funday February 10th
We are having somewhat of a ‘weather event’ here today, so I am happily cozying up inside and making some snacks for the Grammy’s tonight. I had a great weekend with family and we topped it off with some amazing vegan sushi last night. I had a delicious veggie roll with carrots, peppers, avocado, and mango and it was absolutely delicious – I’ll have to try recreating it at home soon!
Here are some of my favorite vegan food and recipes that I found this week on the web:
Vegan Fried Egg – This one is from the new cookbook, Betty Goes Vegan, and it looks amazing! While you’ll have to buy the cookbook to get the recipe, you can check out how it’s made on the Vegan Crunk blog.
Peppperjack Cheese Crackers – These would be a delightful little snack to serve for the Grammy’s or any other party you may have. I will definitely be making a batch of these to serve with hummus!
Buffalo Cauliflower Pizza - Um, sign me up, please. This looks both easy and ridiculously tasty and it would be the perfect way to impress even the most die-hard omnivores.
Lemon Strawberry Sweetheart Cakes – If you are looking for a treat to serve someone special on Valentine’s Day then this would be a fun choice! I love the combo of lemon and strawberry and your sweetheart with appreciate the delicious and beautiful gesture.
Dark Chocolate Mint Truffles – Here’s another little delight you could make for Valentine’s Day. These look surprisingly simple and irresistibly delicious!
Now for some music to delight your ears.
I am getting super psyched for a concert that’s coming up in March – Stars. I’ve seen them before and it was by far the best concert I’ve ever been to. They have a new album out called The North, and this is my favorite song from the album: “Hold On When You Get Love”.
An Aside:
If you’ve been reading the blog you know that I have been cutting back on my gluten intake. After posing some questions on Twitter I ended up with only more questions. One person responded to me saying that you only have to worry about gluten if you have Celiac, which is something I was a little leery of believing. Someone then sent me to this article on the New York Times blog that I think gives one of the best explanations of who should/shouldn’t consume gluten that I’ve seen. Definitely worth the read.

Valentine’s Day is on Thursday – do you have any special plans or recipes in the works for that day?
