Sunday Funday: It’s June!

I can’t believe it’s June already! I have lots of exciting stuff going on this month, but unfortunately exciting also means busy! I have to say that it took me a few days to get back into the swing of things after Vida Vegan Con and I got some disappointing news in the middle of the week: our closing for our new home is during the same time as the Animal Rights Conference, and we can’t get it moved, so it looks like I have to cancel my trip to D.C. at the end of the month. I’m super bummed about it, but at the same time I’m happy we’ll finally be in our new place.

Anyway, onto some great vegan recipes that were floating around the interwebs this week:

Minty and Spicy Lemonade – What’s more thirst-quenching during the summer than a tall glass of lemonade? Well, perhaps a cold beer, but as far as non-alcoholic drinks, lemonade takes the cake!

Super Coleslaw – I love having a heaping pile of chilled coleslaw on my plate during the summer. It’s both satisfying and cool – perfect for beating the summer heat! Also, this recipe is about as simple to prepare as it gets.

Slow Cooker Pineapple-Coconut Farro – Making anything in the slow cooker is great for those who are short on time, and this fresh breakfast dish would be a wonderful thing to wake up to any day of the week. I love the addition of the fresh pineapple to lighten it up a bit.

Vegan Ceviche – Ceviche is a cooking technique that essentially means to cook with the acid of lime or lemon juice. Though it is usually associated with seafood, this recipe uses mushrooms instead. I love this technique for summer because it doesn’t require any heat.

PB Chocolate Pudding Parfait – As the author says – this is the perfect snack when you want something delectable that doesn’t force you to heat up the house. I can’t imagine a yummier treat to cool down with after a long day outside!

Ok, so this isn’t necessarily a fun read, but it’s an informative one and it provides us all with a much-needed reminder. JL is always well-spoken and has no fear when it comes to putting her feelings and thoughts out there. I encourage you to read her post on body image and to always think before you speak (it’s an oldie that we teach our kids, but sometimes we as adults need a reminder).

  • It took me a few days to get back into the swing of things after VVC too. I’m not used to being in a different time zone, staying up late, and waking up early. It was such an amazing weekend, but it does feel good to be well rested again! 🙂

    I can imagine that’s disappointing, but on the other hand, that’s a huge life event that you’re going through! As for JL’s post, I liked that one as well. There are many times I feel like I’m not “vegan” enough because I’m not obsessed with kale, but then I remember that it’s so individual and simply a lifestyle in which I try to be as compassionate as possible–and that includes compassion for myself and my decisions. I can see where she is coming from 😉
