Sunday Funday March 24th
Hello lovelies – happy Sunday! This is the first official weekend of Spring – did you all make good use of it? The weather has actually been improving here, albeit slowly, so I enjoyed being able to go outside in just a light jacket. Though I didn’t get outside as much as I would’ve liked this weekend, I was able to get in some quality time in the kitchen, which was much needed.
In honor of the first weekend of the vernal equinox, I wanted to highlight some recipes that were truly reminiscent of spring: brightly colored, fresh, and full of all the goodies Mother Earth so graciously provided us with.
Rainbow Chili – This bright bowl of chili is packed with all kinds a deliciously veggies including red potatoes, zucchini, mushrooms, and yellow peppers. What a great way to welcome Spring!
Miso and Brown Sugar Glazed Shiitake Caps – These mushroom caps are not only beautiful, but they come together with only 10 ingredients, which is essential for making quick and easy dinners during the week.
Glazed Blueberry Lime Loaf – Though this may not be the healthiest treat ever, blueberries and citrus always remind me of Spring for some reason, so I had to include it here. This would make for an indulgent weekend breakfast treat!
Homemade Oreos – I like to indulge in an Oreo every now and then and I find myself packing them along for camping trips or hiking excursions for a quick, sweet pick-me-up. Now that I’ve seen this amazing recipe for mostly-healthy (and protein-packed) Oreos I doubt I’ll ever go back to the processed kind!
Curried Quinoa Vegetable Soup – Curry, quinoa, and veggies? All together in a delicious soup made with coconut milk? I’m in – no questions asked!

Whether or not you are a JT (Justin Timberlake) fan or not, this video is tear-inducing. So sweet and so well-done – it’s quite the visual masterpiece if you ask me (and I’m not really even a JT fan).
I have a regular column that I’d like to start writing about with regards to happiness and habit change – is this something you all would be interested in? If not, I’ll likely reach out to do some guest posting about it elsewhere, but I want to give you guys “dibs” on it if it’s something you think you’ll enjoy.
