Sunday Funday May 19th
This weekend has been absolutely gorgeous! The weather has been a bit more summer-like than spring, but we’ve been enjoying it nonetheless. The husband was busy this weekend, so we didn’t get to go camping, but we did the next best thing: we had a picnic!
This week marks the return of my Campfire Cooking series, but until then, these delicious-looking, picnic worthy dishes will have to hold you over!
Raw Strawberry Cream Tart – Let’s start with dessert first! This fresh, seasonal dish has many decadent components, but mint finish is just enough to make it seem bright and light!
Strawberry, Avocado, and Mint Salad – More strawberries and mint – such a wonderful combo! This salad stands out because it has a chocolate-balsamic dressing. This would be a delightful surprise for any picnic lunch!
Raw Vegan Spring Rolls – These spring rolls would be a great dish for a picnic because they travel well and you can leave the utensils at home – no fork or plate necessary! Also, they don’t look too heavy, so you wouldn’t be bogged down for the hike back to your car.
Avocado Fries – Avocados are one of my favorite springtime eats, and though I’m not big on fried foods, I would make an exception for these tasty avocado treats! This one would be perfect for taking on a picnic with kids, as they’ll eat anything that looks like a French fry 🙂
Tropical Trail Mix – Trail mix is a classic picnic snack, and I love the way this tropical homemade version looks. It’s like on the added sugar (maple syrup) and big on flavor with coconut and mango – yum!
