Vegan Bleu Cheese Dressing
Before becoming vegan, bleu cheese dressing was one of my favorite salad dressings and dips. I love the tangy flavors and how they complement spicy foods so well. I was experimenting with my new Sandwich Queen column (my effort to veganize the Sandwich King’s – Jeff Mauro – recipes) and one of the recipes called for bleu cheese dressing.
I hadn’t much thought of recreating this dressing as a vegan because I didn’t really see how you could recreate the flavors, let alone the texture. However, I’ve been gaining a lot of confidence in my vegan cooking skills as of late and thought I would give it a try – especially since I needed it to properly veganize the sandwich I was working on.
What came out my experimenting was delicious, tangy, and chunky – in all the right ways. Surprisingly, much of what gives this dressing its tang is what gives tang to my homemade vegan mayo: lemon and vinegar. The texture was surprisingly easy to recreate – all you need is a little extra firm tofu.
So, take note of this recipes, my vegan foodies, because you will need it for my Sandwich Queen recipe on Thursday. You can also use this dressing for salads, dipping veggies or faux meats, or for sandwiches. This woould be the perfect centerpiece to a veggie tray for your next gathering, too!
