Vegan Irish Soda Bread

Happy Thursday! I hope your week is going well. It feels like the days are just flying by this winter!

Anyway, on to today’s post. This Christmas Eve I was preparing my dinner menu and I was struggling to find a good bread to go with our meal. I’m a fairly good baker and I usually make either classic or Parker House dinner rolls. Though, since it was just four of us I didn’t want to make dozens of rolls. After doing some searching I came across this vegan Irish soda bread recipe and I thought it would be perfect.

I ended up cutting the recipe in half because we thought we’d only need one loaf, but it was so good that we definitely could have eaten another! The recipe calls for caraway seeds and currants, but since I didn’t have either on hand, I mixed in some dill weed and fennel seeds. The result was fantastic! The bread was light and fluffy, almost like an oversize biscuit. The dill gave it just enough tang and the fennel provided some sweetness.

This bread was super easy to make and it is also very fast as it is a quick-bread that doesn’t require yeast/rise time. Though it went perfectly with our holiday dinner, it would also go well with everyday meals, especially soups and chili. Give it a try and let me know what you think!
