Cayenne Vegan Peanut Butter Cups

Today’s dessert is one that will be both a surprise and a crowd-pleaser. Homemade peanut butter cups have been all the rage this season on the blogosphere, and with good reason. These little nuggets of deliciousness are quick and easy to make and they are a million times tastier than the store-bought version that you used to make a haul of after a night of trick-or-treating.

Vegan Peanut Butter Cups

Though they are quick and easy and tasty, the best part is that they are completely customizable, shrinkable  and portable, which makes them the perfect choice for serving at holiday parties! The recipe I created is definitely for grown-up tastes (though if your little one has a refined palate they may enjoy them as well), but the flavor possibilities are only limited by your imagination.

I love coming up with new recipes, but my true hope is that you all take the recipes and use them as a jumping off point for your own creations – at least after you’ve made the original once or twice as practice. This recipe is very easily customized to suit your tastes as well as your guests and you could even make them with a seed butter if you have friends or family member who are allergic to nuts (though you may need to use a bit of ground flax to thicken it up a bit if it is a little runny).

Spicy Peanut Butter Cups

I made these ones using full-size cupcake liners, but I’ve also made mini versions which are perfect size for sharing at potlucks or around the office. These ones have a relatively intense after-kick with the cayenne, so the smaller cups make them more accessible for folks who aren’t into spicy (do those people exist? We can’t be friends I don’t think if you do – j/k!).

Cayenne Spiced Peanut Butter Cups

Ingredients

    For the Chocolate Cups:
  • 1/4 cup Coconut Oil, melted
  • 1/4 cup Cocoa Powder
  • 1/4 tsp Cayenne
  • 1 tbsp Agave Nectar
  • 1 tsp Vanilla
  • For the Filling:
  • 1/4 cup Peanut Butter
  • 2 tsp Vanilla
  • 2 tsp Cinnamon

Directions

  1. In a medium bowl, combine the ingredients for the chocolate cups and mix until well-blended and smooth.
  2. Set out 16 or so mini muffin cups or 6-8 large muffin cups on a cookie sheet. Spoon enough of the chocolate into each cup to coat the bottom and then using a spoon press the chocolate halfway up the sides of each cup - being sure not the leave any thin spots in the bottom. Place the cookie sheet in the freezer for 10 minutes.
  3. While the bottoms are setting up, mix your filling ingredients together in a small bowl.
  4. Once the bottoms have set, add 1/2 tsp of filling to the center of each mini muffin cup or 1 tsp to the large cups. Press the filling down gently with your fingers to create a flat disc. Top the filling with enough chocolate sauce to cover and then freeze for another 10 minutes or so.
  5. These can be set out for a little while without melting, though as with any chocolate, be sure to avoid particularly warm spots.

I hope you enjoy these as much as myself and my family did. The husband doesn’t even like regular peanut butter cups but he was keen on these guys.
